Aurora Anguilla Resort & Golf Club, a leading luxury Caribbean Resort, is proud to announce the appointment of Marco Battistella as the new Italian Sous Chef for Oliva – the resort’s Italian-inspired restaurant serving dishes that highlight local ingredients and freshly caught seafood.

Born and raised in Veneto, Italy, Battistella’s culinary explorations began in his family’s kitchen under the guidance of his grandmother, who instilled in him not only the lessons of Italian ingredients but also the importance of culture and traditions. He sets very high standards on the quality and freshness of every single element that goes into his dishes, with fresh fish & seafood and seasonal fruits & vegetables being integral components of his cooking.

His professional career started at some of the most prestigious hotels in the Berici Hills in the province of Vincenza, mastering the art of authentic Italian cuisine at the Michelin Star restaurant Aqua Crua. To expand his expertise, and driven by his love for global flavours, Battistella took on new opportunities that led him to working at highly prominent kitchens, from Australia and the Maldives all the way to the Bahamas, where his culinary creations became synonymous with excellence, each a testament to his unwavering commitment to quality and preserving cultural heritage through food.

In his spare time, Battistella enjoys being out on the water, free diving and fishing for big game, which he’s planning on exploring more while living on Anguilla, known for being an excellent Caribbean destination for fishing enthusiasts. Nothing brings him more joy than cooking the catch of the day for his friends and family, sharing laughs, creating new memories and celebrating life.
